Ingredients
- 6 oz. water
- 4 eggs
- 6 oz. milk
- 8 oz. gourmet pancake and waffle mix
- 1/4 tsp. salt
- 3 oz. butter, melted
- 4 oz. mascarpone
- 2 oz. cream cheese
Directions
Measure the water into a large bowl saving and keeping aside 2 oz. to melt butter in. In the bowl add eggs and milk and mix the ingredients well. Gently stir in the gourmet mix and the salt. Slowly add the melted butter and beat thoroughly until batter is smooth. Cook the crepes till perfectly done.
Blend together the mascarpone and cream cheese very well. Add 2 tablespoons of cream cheese mixture down the center to each crepe and roll it over from both sides. Serve immediately along with accompaniment of fruit sauces.
